Off the beaten track places in Northern Thailand?

I'm looking at heading back to Thailand for a vacation either later this year or early next year, ideally.

I've been to Chiang Mai once but it was only for a few days, sadly. I would love to explore more of Northern Thailand when I head back, but I'm looking for some recommendations if anyone has any. I want to go a little bit off the beaten track, places that are still accessible but perhaps some places that tourists wouldn't really know about.

I always find that when I go to places that aren't tourist heavy that I connect more with the country and get a real feel for a place away from those tourist traps!
